This modern, lightly oxidized, gently baked version of Tieguanyin offers a more floral version with delicacy like green tea. This greener interpretation provides a quick-steeping, soft golden liquor with notes of cream, almond, florals, and a refreshing minerality.

One of China's most famous teas - now available at Moonlit Mercantile. Named after Guanyin, the Buddhist Bodhisattva of Compassion, this tea varietal is said to have been a gift to a poor farmer from the bodhisattva herself.
Despite his village's bleak circumstances, the farmer Wei Yin tended daily to a broken down shrine to Guanyin after fieldwork. One day, he was led by her in a dream to a nearby cave, where he found a single tea shoot that changed his community's fortune.
Now Anxi County's most renowned tea famed across China - Tieguanyin even finds its way to SF dim sum houses, where incidentally, it became Moonlit's childhood favorite.

Pairs well with light-sweet desserts and sweet-savory meals, e.g. almond cookies, Cantonese dim sum, zongzi (Cantonese tamales), and Japanese vegetable tempura.
If brewing Gong Fu Cha style, we recommend very quick steeps similar to a green tea or Taiwanese light oolong. Steeping Western Style, this tea is wonderful for brewing a large, crowd-pleasing batch for many guests.
