Lapsang Souchong (正山小种)
A quite modern, non-smoked version of China's first historical black tea. Yields a robust sweetness akin to longan, toasted caramel, & single-malt scotch.
While the original Lapsang is famous across both East & West for its unmatched, smoky intensity - Fujian locals recently began to explore what natural flavors and honey-like character this varietal can offer outside pine-firing.
For your first steep, we recommend brewing 8g of tea with 12oz of 190*F for 4 minutes. Avoiding boiling temperatures will help accentuate this batch's sweet subtlety. That said, longer & hotter steeps will produce a roastier depth for milk pairing, or for those prefer a darker profile of black tea.
