Tieguanyin Oolong | 铁观音 | Iron Goddess of Mercy
This deeply oxidized, traditional charcoal roast offers a darker personality - resteeping and aging well.
This interpretation offers a red-brown liquor, offering caramel complexity, with tones of brown sugar, smoke, and hints of cocoa. It deepens both in toasty sweetness upon resteep.

One of China's most famous teas - now available at Moonlit Mercantile. Named after Guanyin, the Buddhist Bodhisattva of Compassion, this tea varietal is said to have been a gift to a poor farmer from the bodhisattva herself.
Despite his village's bleak circumstances, the farmer Wei Yin tended daily to a broken down shrine to Guanyin after fieldwork. One day, he was led by her in a dream to a nearby cave, where he found a single tea shoot that changed his community's fortune.
Now Anxi County's most renowned tea famed across China - Tieguanyin even finds its way to SF dim sum houses, where incidentally, it became Moonlit's childhood favorite.

Gong Fu Style, while not as quick-steeping as the modern version, this iteration will offer more resteeps for a longer session.
